This hearty and flavorful Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake is the perfect comfort food. With seasoned ground beef, sweet corn, rotini pasta, and a creamy ranch sauce, topped with melted cheddar, it’s a satisfying one-dish meal that the whole family will love.

 

Ingredients

– 1 lb ground beef

– 1 packet ranch seasoning mix

– 1 can (15 oz) sweet corn, drained

– 1 package (12 oz) rotini pasta

– 1 cup shredded cheddar cheese

– 1 cup sour cream

– 1/2 cup milk

– 2 tablespoons olive oil

– 1 teaspoon garlic powder

– Salt and pepper, to taste

– Fresh parsley, chopped (optional for garnish)

Instructions

1. **Cook the Pasta:**

– Cook the rotini pasta according to package instructions. Drain and set aside.

 

2. **Prepare the Beef:**

– In a large skillet, heat olive oil over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 7-8 minutes.

– Stir in the ranch seasoning mix, garlic powder, salt, and pepper. Add the sweet corn and cook for another 2-3 minutes.

 

3. **Make the Sauce:**

– In a small bowl, combine the sour cream and milk. Stir until smooth.

 

4. **Assemble the Bake:**

– Preheat the oven to 375°F (190°C).

– In a large mixing bowl, combine the cooked pasta, seasoned beef and corn mixture, and sour cream sauce. Stir in half of the shredded cheddar cheese.

 

5. **Bake:**

– Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining cheddar cheese.

– Bake for 20 minutes, or until the cheese is melted and bubbly.

 

6. **Serve:**

– Remove from the oven and let it cool for 5 minutes. Garnish with chopped parsley if desired. Serve warm.
