1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1cup orzo pasta
2cups chicken or vegetable broth
1cup tomato sauce or crushed tomatoes
1/2 teaspoon dried oregano
Salt and pepper to taste
Grated Parmesan or Kefalotyri cheese for serving (optional)
Instructions
In a saucepan, heat the olive oil over medium heat. Sauté the chopped onion until translucent, about 4–5 minutes.
Add the garlic and cook for another minute until fragrant.
Stir in the orzo and cook for 1–2 minutes to lightly toast it.
Pour in the broth and tomato sauce. Add oregano, salt, and pepper.
Bring to a boil, then reduce heat and simmer uncovered for about 10–12 minutes, stirring frequently until the orzo is tender and has absorbed most of the liquid.
Adjust seasoning if needed. Serve warm, topped with grated cheese if desired.
Notes
Stir frequently while simmering to prevent orzo from sticking to the bottom.
Use vegetable broth to make it vegetarian.
Add a knob of butter or a drizzle of olive oil at the end for extra richness.
Leftovers thicken as they sit; add a splash of water or broth when reheating.
