  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 cup artichoke hearts, drained and halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and dried oregano. Add the chicken to the skillet and cook for 5-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the artichoke hearts, olives, lemon juice, lemon zest, and chicken broth to the skillet. Stir to combine.
  5. Return the chicken to the skillet, nestling it into the sauce. Cover and simmer for 5-7 minutes, allowing the chicken to absorb the flavors and the sauce to reduce slightly.
  6. Garnish with fresh parsley and serve the chicken with the artichoke and olive mixture on top.
