A flavorful dish featuring tender salmon mixed with Mediterranean herbs, capers, and lemon zest. These patties are pan-fried to perfection and pair wonderfully with tzatziki sauce or a fresh salad.

 

Ingredients

• 1 lb salmon fillets (or canned salmon, drained), cooked and flaked

• 1/2 cup breadcrumbs (or almond flour for gluten-free option)

• 2 large eggs, lightly beaten

• 1/4 cup red onion, finely chopped

• 2 cloves garlic, minced

• 2 tablespoons capers, roughly chopped

• 1/4 cup fresh parsley, chopped

• 2 tablespoons fresh dill, chopped

• Zest of 1 lemon

• Juice of 1 lemon

• Salt and freshly ground black pepper, to taste

• Olive oil, for frying

Instructions

1. In a large bowl, combine the flaked salmon, breadcrumbs, eggs, red onion, garlic, capers, parsley, dill, lemon zest, lemon juice, salt, and pepper.

2. Mix gently until all ingredients are well incorporated.

3. Form the mixture into patties, about 1/4 cup each. For a firmer texture, chill the patties in the refrigerator for 15 minutes.

4. Heat olive oil in a large skillet over medium heat.

5. Fry the patties for 3-4 minutes per side, or until golden brown and cooked through.

6. Transfer patties to a paper towel-lined plate to drain excess oil.

7. Serve warm with a side of tzatziki sauce or a fresh green salad.

 

Notes

– Canned salmon can be used for convenience.

– Chilling the patties before frying helps them hold together better.

– Adjust the capers and lemon according to your taste preference for a more pronounced Mediterranean flavor.
