These Mediterranean Spinach and Feta Cheese Crisps are a delicious, crispy snack filled with the rich flavors of feta cheese, spinach, and aromatic herbs. Perfect as an appetizer or a light bite, they offer a satisfying crunch with every bite.

 

Ingredients

– 1 cup fresh spinach, finely chopped

– 1/2 cup feta cheese, crumbled

– 1/4 cup Parmesan cheese, grated

– 1/2 tsp garlic powder

– 1/2 tsp dried oregano

– 1/4 tsp black pepper

– 1/4 tsp salt (optional, as feta is salty)

– 1/2 cup shredded mozzarella cheese

– 1 large egg

– 6 sheets phyllo dough

– 2 tbsp olive oil (for brushing)

Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a bowl, mix spinach, feta cheese, Parmesan, garlic powder, oregano, black pepper, salt, and shredded mozzarella.

3. Beat the egg and add it to the mixture. Stir until well combined.

4. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Repeat with remaining sheets, stacking them.

5. Cut the stacked phyllo dough into squares or triangles, depending on your preference.

6. Spoon a small amount of the spinach-feta mixture onto each piece and fold it into a crisp, sealing the edges.

7. Place the crisps on the prepared baking sheet and brush the tops with olive oil.

8. Bake for 12-15 minutes, or until golden brown and crispy.

9. Let them cool slightly before serving. Enjoy!

 

Notes

– Serve with tzatziki sauce or a yogurt dip for extra flavor.

– Store leftovers in an airtight container and reheat in the oven for crispiness.

– For a flakier texture, use butter instead of olive oil for brushing the phyllo.

– You can also make these in an air fryer at 350°F (175°C) for about 10 minutes.
