Description

A vibrant, no-fuss appetizer perfect for any occasion! These crispy phyllo crisps are topped with a flavorful blend of fresh spinach, tangy feta, garlic, and lemon, finished with a sprinkle of oregano. They’re an ideal Mediterranean-inspired snack that’s both satisfying and healthy.


Ingredients

For the Crisp Base:
• 6 sheets phyllo dough, thawed
• 1/4 cup olive oil, melted (plus extra for brushing)

For the Topping:
• 2 cups fresh spinach, roughly chopped
• 1/2 cup crumbled feta cheese
• 1/4 cup finely diced red onion (optional)
• 1 clove garlic, minced
• 1 tbsp lemon juice
• 1 tsp dried oregano
• Salt and pepper, to taste

Optional Garnish:
• Chopped kalamata olives or halved cherry tomatoes


Instructions

  • Prepare the Crisp Base:

    • Preheat your oven to 375°F (190°C).
    • Lay one sheet of phyllo dough on a clean work surface. Brush lightly with olive oil. Place another sheet on top and brush with oil again.
    • Repeat if you’d like a sturdier crisp (using 2–3 layers total).
    • Using a sharp knife or pizza cutter, slice the layered phyllo into desired shapes (e.g., squares or triangles).
    • Arrange the pieces on a baking sheet lined with parchment paper. Brush the tops lightly with additional olive oil.
    • Bake for 10–12 minutes or until the phyllo turns golden and crispy. Remove from the oven and let cool.
  • Prepare the Topping:

    • In a medium bowl, combine the chopped spinach, crumbled feta, diced red onion (if using), and minced garlic.
    • Stir in the lemon juice, dried oregano, salt, and pepper until well mixed.
  • Assemble the Crisps:

    • Spoon a small, even layer of the spinach-feta mixture onto each crisp.
    • For extra color and flavor, garnish with a few chopped kalamata olives or a halved cherry tomato on top of each.
  • Serve:

    • Serve immediately, or keep in the refrigerator for up to 2 hours before serving. (If refrigerating, add the topping just before serving to maintain crispness.)

Notes


• If you prefer extra crunch, use 3 layers of phyllo dough for a thicker crisp.
• Adjust salt in the topping carefully, as feta can be naturally salty.
