– 2 apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
– 1/4 cup granulated sugar
– 1 tablespoon brown sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1 tablespoon lemon juice
– 1 tablespoon cornstarch
– 1 tablespoon butter, cut into small pieces
– 1 package refrigerated pie crusts (or homemade)
– 1 egg, beaten (for egg wash)
– Powdered sugar for dusting (optional)
1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
2. In a medium bowl, combine the diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated.
3. Roll out the pie crusts on a floured surface and use a round cutter (about 4 inches in diameter) to cut out circles.
