A fun, no‐bake treat bursting with cookie flavor and a hint of peanut butter. These bite‐sized cookie balls are perfect for parties, snacks, or an indulgent dessert that’s quick and easy to make.

 

Ingredients

– 2 cups finely crushed chocolate chip cookies (about 20 cookies)

– 1/2 cup creamy peanut butter

– 1/4 cup honey

– 1 cup quick oats (lightly processed if using rolled oats)

– 1/2 cup mini chocolate chips (plus extra for rolling, if desired)

– 1/4 cup chopped walnuts (optional)

– 1 tsp vanilla extract

– Pinch of salt

Instructions

1. In a large bowl, combine the crushed cookies, oats, mini chocolate chips, walnuts (if using), and a pinch of salt.

2. In a microwave-safe bowl, gently heat the peanut butter, honey, and vanilla extract (about 30-45 seconds) until the mixture is smooth and pourable.

3. Pour the warm mixture over the dry ingredients and stir until well combined.

4. Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour to firm up.

5. Once chilled, scoop out tablespoon-sized portions and roll them into balls.

6. Optional: Roll the cookie balls in extra mini chocolate chips or cocoa powder.

7. Store in an airtight container in the refrigerator for up to 1 week.

 

Notes

– For a chewier texture, use rolled oats processed lightly in a food processor.

– Feel free to omit walnuts for a nut-free version.

– Adjust the sweetness by increasing or decreasing the honey based on your taste.
