- 1 teaspoon lemon zest

- 150g lemon curd (store-bought or homemade)
Instructions
- Prepare the base: Mix the crushed biscuits with melted butter until well combined. Press the mixture firmly into the base of a lined baking tin. Refrigerate for 30 minutes to set.
- Make the filling: In a bowl, whisk together the cream cheese, heavy cream, powdered sugar, vanilla extract, lemon juice, and lemon zest until smooth and fluffy.
- Assemble: Spread the cream cheese mixture evenly over the chilled biscuit base.
- Add the topping: Gently spread the lemon curd over the filling.
- Chill: Refrigerate for at least 4 hours (or overnight) until firm.
