  • 100ml heavy cream
  • 50g powdered sugar

  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

For the topping:

  • 150g lemon curd (store-bought or homemade)

Instructions

  • Prepare the base: Mix the crushed biscuits with melted butter until well combined. Press the mixture firmly into the base of a lined baking tin. Refrigerate for 30 minutes to set.

  • Assemble: Spread the cream cheese mixture evenly over the chilled biscuit base.
