Deliciously rich and moist chocolate muffins inspired by the spirit of athletic excellence. These muffins offer a perfect blend of cocoa and subtle sweetness, making them ideal for breakfast, snack time, or a post-workout treat.

 

Ingredients

– 1 3/4 cups all-purpose flour

– 1/2 cup unsweetened cocoa powder

– 1 cup granulated sugar

– 2 tsp baking powder

– 1/2 tsp salt

– 2 large eggs, at room temperature

– 1 cup whole milk

– 1/2 cup vegetable oil

– 2 tsp vanilla extract

– 1/2 cup mini chocolate chips (optional)

Instructions

1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.

3. In a separate bowl, beat the eggs, then add milk, vegetable oil, and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and stir until just combined; avoid overmixing.

5. Fold in the mini chocolate chips if using.

6. Divide the batter evenly among the muffin cups.

7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

8. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

 

Notes

– For an extra chocolaty kick, drizzle with a light chocolate glaze once cooled.

– Do not overmix the batter to keep the muffins light and fluffy.

– These muffins are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
