One-Pot Black Pepper Chicken is a flavorful and easy-to-make dish that brings the bold taste of black pepper into a savory sauce. Tender chicken pieces are stir-fried with colorful bell peppers and onions, then coated in a rich, spicy black pepper sauce. This quick and satisfying meal is perfect for busy weeknights and pairs wonderfully with steamed rice or noodles.
– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 tablespoon light soy sauce
– 1 tablespoon dry sherry or Shaoxing wine
– 1 tablespoon cornstarch
– 2 tablespoons vegetable or sesame oil
– 1 red bell pepper, thinly sliced
– 1 green bell pepper, thinly sliced
– 1 small yellow onion, thinly sliced
– 2 teaspoons minced garlic
– 1 teaspoon freshly ground black pepper (adjust to taste)
– 1/2 cup chicken broth
– 1 tablespoon light soy sauce
– 1 tablespoon oyster sauce
– 1 teaspoon sugar
– 1/2 teaspoon dark soy sauce
– 1/2 teaspoon sesame oil
1. In a bowl, combine chicken pieces with 1 tablespoon light soy sauce, 1 tablespoon dry sherry, and 1 tablespoon cornstarch. Mix well and let marinate for 10 minutes.
2. In a small bowl, whisk together chicken broth, 1 tablespoon light soy sauce, oyster sauce, sugar, dark soy sauce, and sesame oil. Set aside.
3. Heat 2 tablespoons of oil in a wok or large skillet over high heat until smoking. Add marinated chicken in a single layer and sear until opaque on all sides, about 2 minutes. Remove chicken from the wok and set aside.
4. Without cleaning the wok, add sliced onion and garlic. Stir-fry for 20 seconds until fragrant.
5. Add sliced bell peppers and 1 teaspoon black pepper. Stir-fry for another 30 seconds.
6. Return the chicken to the wok and pour in the prepared sauce mixture. Stir well to combine and deglaze the wok.
7. Bring the sauce to a simmer and cook for 10–15 seconds until it thickens slightly.
8. Serve hot over steamed rice or noodles.
– For a gluten-free version, use tamari instead of soy sauce and dry sherry instead of Shaoxing wine.
– Adjust the amount of black pepper to your preferred spice level.
– To enhance the flavor, consider adding sliced celery or mushrooms along with the bell peppers.
– This dish pairs well with steamed jasmine rice or lo mein noodles.
