- 2 tablespoons vegetable oil
- 1/2 lb beef, thinly sliced (flank steak or sirloin works best)
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 cups cooked rice (preferably day-old rice)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and stir-fry until browned, about 3-4 minutes. Remove the beef from the pan and set aside.
- In the same pan, add the remaining oil and sauté the onion and garlic until fragrant and softened, about 2-3 minutes.
- Push the onions and garlic to one side of the pan, then pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
- Add the cooked rice to the pan and break up any clumps with a spatula. Stir-fry for 3-4 minutes until the rice is heated through.
- Add the soy sauce, oyster sauce (if using), sesame oil, and the cooked beef back into the pan. Stir well to combine and heat everything through.
- Season with salt and pepper to taste. Garnish with chopped green onions and serve immediately.
Notes
- Use cold, day-old rice for the best texture in fried rice.
- You can substitute the beef with chicken, shrimp, or tofu for a different protein option.
- For extra flavor, add a little chili paste or hot sauce if you like it spicy.
