A playful twist on two classic treats—rich, nutty peanut butter cookies sandwiched with a gooey, melty s’mores filling. These cookies combine the irresistible flavors of roasted peanut butter with melted chocolate, marshmallow fluff, and a hint of graham cracker crunch, making them the perfect dessert or snack for any occasion.

For the Peanut Butter Cookies:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of salt

For the S’mores Filling:

 

  • 1/2 cup mini marshmallows (or roughly chopped large marshmallows)
  • 1/2 cup milk chocolate chips
  • 1/2 cup graham cracker crumbs
  • 12 tsp heavy cream (optional, to loosen the filling if needed)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Prepare Cookie Dough: In a medium bowl, mix the peanut butter, sugar, egg, vanilla, baking soda, and salt until smooth and well combined.
  • Shape Cookies: Roll tablespoon-sized balls of dough and place them about 2 inches apart on the baking sheet. Flatten each ball gently with a fork, making a criss-cross pattern.
  • Bake: Bake the cookies for 8–10 minutes until set but still soft. Allow cookies to cool completely on the baking sheet.
  • Make Filling: In a small bowl, stir together mini marshmallows, chocolate chips, and graham cracker crumbs. If the mixture feels too dry, add 1–2 teaspoons of heavy cream to help bind the ingredients.
  • Assemble: Spread a generous layer of the s’mores filling on the underside of one cookie and top with a second cookie to form a sandwich.

 

  • Enjoy: Repeat with the remaining cookies. For an extra indulgent treat, place assembled sandwiches in a preheated 350°F oven for 2–3 minutes to let the chocolate and marshmallows melt slightly—watch carefully to avoid over-melting.

Notes

  • The cookies are best when the peanut butter dough is soft and chewy. Avoid overbaking for maximum tenderness.
  • For added texture, lightly toast the graham cracker crumbs before mixing them into the filling.

These sandwiches can be stored in an airtight container at room temperature for up to 3 days.
