  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) tub whipped topping (like Cool Whip), divided
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1/2 cup chopped pecans (for topping)
  • 1/2 cup pecan halves (for garnish)
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. Mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a 9×13 inch dish to form a crust. Chill in the refrigerator.
  2. In a bowl, beat softened cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread evenly over the crust. Return to refrigerator.
  3. In another bowl, whisk together vanilla pudding mix and cold milk until thickened. Spread over the cream cheese layer and chill.
  4. For the pecan pie topping, combine brown sugar, heavy cream, butter, salt, and vanilla extract in a saucepan over medium heat. Stir until the mixture begins to boil. Simmer for 2-3 minutes. If desired, add cornstarch to thicken.
  5. Stir in chopped pecans, then let the mixture cool slightly before pouring over the pudding layer. Spread evenly and refrigerate until set.
  6. Top with remaining whipped topping and garnish with pecan halves.
  7. Chill for at least 4 hours or overnight before serving.
