Peri Peri Chicken Skewers with a Butter Sauce is a flavorful and spicy dish where marinated chicken is grilled or roasted on skewers and served with a rich and creamy butter sauce. The peri peri sauce provides a tangy, spicy kick, while the butter sauce adds a silky richness, making this dish both spicy and comforting.

 

Ingredients

For the Chicken Marinade:

– 500g chicken breast, cut into cubes

– 2 tbsp peri peri sauce (or use a blend of chili sauce, garlic, and lemon juice)

– 2 tbsp olive oil

– 1 tbsp lemon juice

– 1 tsp paprika

– 1/2 tsp ground cumin

– 1/2 tsp garlic powder

– 1/4 tsp ground black pepper

– Salt, to taste

For the Butter Sauce:

– 3 tbsp unsalted butter

– 1 tbsp peri peri sauce

– 1 clove garlic, minced

– 1 tbsp fresh lemon juice

– 1 tbsp fresh parsley, chopped (for garnish)

Instructions

1. In a bowl, combine the chicken cubes with the peri peri sauce, olive oil, lemon juice, paprika, cumin, garlic powder, black pepper, and salt. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes (or overnight for more flavor).

2. Preheat the grill or a grill pan over medium heat. Thread the marinated chicken cubes onto skewers.

3. Grill the chicken skewers for 5-7 minutes on each side, or until fully cooked and golden brown, turning occasionally for even cooking.

4. While the chicken is grilling, prepare the butter sauce. In a small pan, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.

5. Stir in the peri peri sauce and lemon juice. Simmer for 2 minutes until the sauce thickens slightly.

6. Once the chicken skewers are cooked, drizzle the butter sauce over the skewers and garnish with fresh parsley.

7. Serve hot with your choice of sides or a fresh salad.

 

Notes

– You can adjust the level of spiciness by adding more or less peri peri sauce to the marinade and butter sauce.

– If you prefer, you can use chicken thighs instead of breast for juicier meat.

– Serve these skewers with rice, grilled vegetables, or a refreshing salad to balance the heat.

– For a smoky flavor, you can add smoked paprika to the marinade.
