Pineapple Bread is a moist and flavorful quick bread that combines the tropical sweetness of pineapple with a tender crumb. This easy-to-make loaf is perfect for breakfast, brunch, or as a delightful snack.

 

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup crushed pineapple, drained

– 1/2 cup chopped walnuts (optional)

Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.

2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

3. In a large bowl, cream together the softened butter and sugar until light and fluffy.

4. Beat in the eggs one at a time, then stir in the vanilla extract.

5. Mix in the drained crushed pineapple.

6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

7. Fold in the chopped walnuts, if using.

8. Pour the batter into the prepared loaf pan.

9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

 

Notes

– For added flavor, you can substitute half of the all-purpose flour with whole wheat flour.

– If you prefer a sweeter bread, you can increase the sugar to 1 1/4 cups.

– This bread can be stored at room temperature for up to 3 days or frozen for up to 3 months.
