Ingredients

– 1 cup dried pineapple, finely chopped

– 1 1/2 cups unsweetened shredded coconut, plus extra for rolling

– 1/2 cup almond flour (or crushed graham crackers)

– 1/4 cup honey or maple syrup

– 1/2 teaspoon vanilla extract

– 1/4 teaspoon sea salt

– 1 tablespoon coconut oil, melted

Instructions

1. **Prepare the mixture:**

– In a food processor, combine dried pineapple, shredded coconut, almond flour, honey, vanilla extract, sea salt, and melted coconut oil.

– Pulse until the mixture is sticky and well combined.

 

2. **Form the balls:**
