These Pineapple Coconut No-Bake Balls are a sweet, tropical treat made with just a few ingredients. They are easy to prepare, require no baking, and are perfect for a quick snack or dessert.

Ingredients

– 1 cup dried pineapple, finely chopped

– 1 cup shredded unsweetened coconut, plus extra for rolling

– 1/2 cup almond flour (or crushed graham crackers)

– 1/4 cup honey or maple syrup

– 1 teaspoon vanilla extract

– 1 tablespoon coconut oil, melted

– 1/4 teaspoon salt

Instructions

1. In a food processor, blend the dried pineapple until finely chopped.  

2. Add the shredded coconut, almond flour, honey (or maple syrup), vanilla extract, coconut oil, and salt.  

3. Process until the mixture comes together into a sticky dough.  

4. Scoop out small portions and roll them into bite-sized balls.  

5. Roll each ball in extra shredded coconut for coating.  

6. Place in the refrigerator for at least 30 minutes to firm up.  

7. Enjoy chilled or at room temperature!  

Notes

– Store in an airtight container in the fridge for up to a week.  

– Use sweetened shredded coconut for a sweeter treat.  

– Add a pinch of cinnamon or nutmeg for extra flavor.  

– For a nut-free version, replace almond flour with crushed oats or graham crackers.
