- 2 cups (400g) granulated sugar
- 1 cup (240ml) apple cider vinegar
- 1/2 tsp turmeric
- 1/2 tsp ground ginger
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (optional, for extra heat)
Instructions
- In a medium saucepan over medium heat, combine sugar, apple cider vinegar, turmeric, ginger, garlic powder, and cayenne pepper. Stir until sugar dissolves.
- Bring the mixture to a simmer, then add the sliced jalapeños and pineapple chunks.
- Simmer for 10-15 minutes until the jalapeños soften and the syrup thickens slightly.
- Using a slotted spoon, transfer the jalapeños and pineapple into sterilized jars, leaving about ½ inch of headspace.
- Pour the hot syrup over the jalapeños and pineapple, ensuring they are fully covered.
- Seal the jars and let them cool to room temperature. Refrigerate for at least 24 hours before serving to allow the flavors to meld.
Notes
- For longer storage, use a water bath canning method and process the jars for 10 minutes.
- The flavor intensifies over time, making it even better after a week.
- Use gloves when handling jalapeños to avoid irritation.
