This hearty, budget-friendly casserole is a Southern favorite made with ground beef, potatoes, and creamy cheese. It’s a perfect comfort food that feeds a crowd without breaking the bank!

  • 1 lb ground beef
  • 4 large potatoes, peeled and sliced thin
  • 1 medium onion, diced
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for frying)

Instructions

  • Preheat the oven to 350°F (175°C).
  • Heat olive oil in a large skillet over medium heat. Brown the ground beef with the diced onion until the meat is fully cooked, about 7-10 minutes.
  • Add the garlic powder, salt, and pepper to the beef mixture and stir to combine.
  • In a separate bowl, combine the cream of mushroom soup and milk, mixing until smooth.
  • In a greased 9×13-inch baking dish, layer the sliced potatoes, followed by the ground beef mixture.
  • Pour the soup mixture over the beef and potatoes, spreading evenly.
  • Top with shredded cheddar cheese.
  • Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  • Let the casserole rest for 5 minutes before serving.
