Potatoes O’Brien is a classic American side dish featuring diced potatoes, colorful bell peppers, and onions sautéed to perfection. This savory and versatile dish makes a great complement to any breakfast or brunch.

 

Ingredients

– 4 medium potatoes, diced

– 1 red bell pepper, diced

– 1 green bell pepper, diced

– 1 medium onion, diced

– 2-3 tablespoons olive oil or butter

– Salt, to taste

– Pepper, to taste

– Optional: 1/2 teaspoon paprika or garlic powder

Instructions

1. Rinse and dice the potatoes, bell peppers, and onion. Optionally, parboil the potatoes for 5 minutes to reduce cooking time.

2. Heat olive oil or butter in a large skillet over medium heat.

3. Add the diced potatoes and cook for 5 minutes, stirring occasionally.

4. Add the bell peppers and onions, and season with salt, pepper, and optional spices.

5. Continue cooking for 15-20 minutes, stirring frequently until the potatoes are tender and slightly crispy.

6. Taste and adjust seasonings as needed before serving.
