Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish.

2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and pumpkin pie spice.

3. In another bowl, combine the pumpkin puree, vegetable oil, eggs, and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and mix until just combined.

5. Pour the batter into the prepared baking dish and spread evenly.

6. To make the streusel topping, mix together the flour, brown sugar, and ground cinnamon. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

7. Sprinkle the streusel evenly over the batter.

8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

9. Allow the cake to cool slightly before serving.

 

Notes

– Adjust the pumpkin pie spice to taste if you prefer a more pronounced spice flavor.

– This coffee cake is best served warm and can be enjoyed with a hot cup of coffee.
