This Quick Thai Chicken Stir Fry is a flavorful, easy-to-make dish that combines tender chicken with colorful vegetables and a savory Thai-inspired sauce. Perfect for a healthy, quick weeknight dinner that’s packed with vibrant flavors.

 

Ingredients

– 2 boneless, skinless chicken breasts, thinly sliced

– 1 tablespoon vegetable oil

– 1 red bell pepper, sliced

– 1 yellow bell pepper, sliced

– 1 carrot, julienned

– 1 small zucchini, sliced

– 2 cloves garlic, minced

– 1 tablespoon fresh ginger, minced

– 3 tablespoons soy sauce

– 1 tablespoon fish sauce

– 1 tablespoon honey

– 1 tablespoon lime juice

– 1/2 teaspoon red pepper flakes (optional for spice)

– 1/4 cup fresh cilantro, chopped

– Cooked rice, for serving

Instructions

1. Heat vegetable oil in a large skillet or wok over medium-high heat.

2. Add the sliced chicken and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove chicken from the pan and set aside.

3. In the same pan, add the bell peppers, carrot, and zucchini. Cook for 3-4 minutes until the vegetables are tender-crisp.

4. Add the garlic and ginger to the pan and sauté for 1 minute until fragrant.

5. In a small bowl, whisk together soy sauce, fish sauce, honey, lime juice, and red pepper flakes (if using).

6. Return the chicken to the pan and pour the sauce over the top. Stir to coat everything evenly and cook for another 2-3 minutes.

7. Remove from heat and garnish with fresh cilantro.

8. Serve the stir fry over cooked rice and enjoy!

 

Notes

– For a spicier dish, add more red pepper flakes or some chopped fresh chili peppers.

– You can substitute vegetables according to your preference, such as broccoli, snap peas, or baby corn.

– This stir fry can be served with rice noodles instead of rice for a different texture.
