Description

A comforting twist on the classic grilled cheese—fluffy scrambled eggs tucked between golden, buttery toasted bread with melty cheese. Perfect for a hearty breakfast or a quick lunch, this sandwich offers a delightful blend of creamy eggs and crispy bread.


Ingredients

  • 2 slices of your favorite bread (sourdough, white, or whole wheat)
  • 2 large eggs
  • 12 tbsp milk (optional, for extra fluff)
  • Salt and pepper, to taste
  • 1 tbsp butter (divided)
  • 2 slices of cheese (Cheddar, American, or Swiss)

 

  • (Optional) A pinch of dried herbs (chives or parsley)

Instructions

  • Prepare Eggs: In a bowl, whisk the eggs with milk (if using), salt, and pepper until well combined.
  • Scramble: Heat a non-stick skillet over medium heat and melt ½ tbsp of butter. Pour in the egg mixture and gently scramble until softly set. Remove from heat before they’re fully firm, as they’ll continue to cook in the sandwich.
  • Assemble Sandwich: Butter one side of each bread slice with the remaining butter. On the unbuttered side of one slice, layer one slice of cheese, then spoon on the scrambled eggs (sprinkled with herbs if desired) and top with the second cheese slice. Place the other bread slice on top with the buttered side facing out.
  • Grill: Heat a clean skillet or griddle over medium heat. Grill the assembled sandwich for 3–4 minutes per side, pressing gently, until the bread is golden and crispy and the cheese has melted.

 

  • Serve: Slice in half and serve warm.

Notes

For added flavor, consider adding a few slices of tomato or a handful of spinach between the eggs and cheese.

Adjust seasoning to taste and use your favorite cheese for a personalized touch.
