Sesame Khachapuri is a traditional Georgian dish featuring a soft, fluffy bread filled with a mixture of cheese and eggs, topped with sesame seeds for added flavor and crunch. This delicious pastry is typically served as a breakfast or snack and can be enjoyed warm with a variety of fillings.

  • For the Dough:
  • 2 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 1/2 cup warm water
  • 1/4 cup olive oil
  • 1/2 teaspoon salt

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup feta cheese, crumbled
  • 1 egg (for the filling)
  • For the Topping:
  • 1 egg (for brushing)
  • 2 tablespoons sesame seeds
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Dough: In a small bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes, or until the mixture becomes frothy. In a larger bowl, combine the flour and salt. Add the yeast mixture and olive oil, and stir until the dough comes together. Knead the dough on a floured surface for 8–10 minutes until smooth and elastic.
  2. Cover the dough with a clean towel and let it rise for 1 hour or until doubled in size.
  3. Prepare the Filling: In a bowl, combine ricotta, mozzarella, feta, and one egg. Stir until well mixed. Set aside.
  4. Shape the Khachapuri: Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a round shape, about 6 inches in diameter. Spoon the cheese mixture into the center of each dough circle, leaving a border around the edges. Fold the edges of the dough over the filling to form a boat shape, pinching the ends together to seal.
  5. Bake the Khachapuri: Preheat your oven to 400°F (200°C). Place the shaped khachapuri onto a baking sheet lined with parchment paper. Brush the dough with a beaten egg and sprinkle sesame seeds over the top. Drizzle a little olive oil on the edges of the bread for extra crispiness.
  6. Bake for 15–20 minutes, or until the dough is golden brown and the cheese is bubbling.
  7. Serve: Remove the khachapuri from the oven and let cool slightly before serving. You can break an egg into the center just before serving for a traditional touch.

Notes

  • Feel free to experiment with different types of cheese for a unique flavor.
  • If you prefer a softer texture, you can cover the khachapuri with foil during baking and remove it for the last 5 minutes to brown the top.
  • This dish is best served warm, with a drizzle of olive oil or melted butter on top.
