Description

    • 1/2 teaspoon baking soda
    • 1 large egg
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground cloves
    • 1/4 teaspoon ground ginger
    • Pinch of salt
  • For the crumb topping:

    • 1 cup all-purpose flour
    • 1/2 cup packed brown sugar
    • 1/4 cup unsalted butter, cold and cubed
    • 1/4 teaspoon ground cinnamon

Instructions

  • Make the crust: In a large bowl, mix the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, stirring until the dough comes together. Press the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  • Make the filling: In a medium saucepan, combine the molasses, hot water, and baking soda. Stir until smooth. Remove from heat and let it cool slightly before whisking in the egg, cinnamon, cloves, ginger, and salt.
  • Prepare the topping: In a bowl, combine the flour, brown sugar, cold butter, and cinnamon. Use a pastry cutter to work the butter into the dry ingredients until the mixture forms crumbs.
  • Assemble the pie: Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit it into a 9-inch pie pan. Pour the molasses filling into the crust. Sprinkle the crumb topping evenly over the filling.
  • Bake the pie: Bake for 40-45 minutes, or until the filling is set and the topping is golden brown. A toothpick inserted into the center should come out clean. Let the pie cool before serving.
