Instructions
- Sear the Beef:
- Heat olive oil in a skillet over medium-high heat.
- Add the beef bites and sear until browned on all sides, about 2–3 minutes per side.
- Transfer the beef to the slow cooker.
- Add the Potatoes:
- Place the halved baby potatoes into the slow cooker with the beef.
- Prepare the Garlic Butter Sauce:
- In a small bowl, mix the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
- Combine and Cook:
- Pour the garlic butter sauce over the beef and potatoes in the slow cooker.
- Add the beef broth to the slow cooker to add moisture and depth to the dish.
- Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender and the potatoes are cooked through.
- Serve:
- Serve warm, garnished with fresh parsley if desired.
