Ingredients

Units Scale

For the Beef and Potatoes:

  • 1 1/2 lbs beef stew meat, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 1/4 cup beef broth
  • 1 tbsp olive oil

For the Garlic Butter Sauce:

  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper

Instructions

  • Sear the Beef:
    • Heat olive oil in a skillet over medium-high heat.
    • Add the beef bites and sear until browned on all sides, about 2–3 minutes per side.
    • Transfer the beef to the slow cooker.
  • Add the Potatoes:
    • Place the halved baby potatoes into the slow cooker with the beef.
  • Prepare the Garlic Butter Sauce:
    • In a small bowl, mix the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
  • Combine and Cook:
    • Pour the garlic butter sauce over the beef and potatoes in the slow cooker.
    • Add the beef broth to the slow cooker to add moisture and depth to the dish.
    • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender and the potatoes are cooked through.
  • Serve:
    • Serve warm, garnished with fresh parsley if desired.
    • Pair with a side of crusty bread, green beans, or a fresh salad for a complete meal.

Notes

  • For added flavor, consider adding a squeeze of fresh lemon juice before serving.
  • Ensure the beef is cut into uniform pieces for even cooking.
  • This dish pairs well with a side of steamed vegetables or a crisp green salad.
