These Star Bread Chips are festive, crispy snacks made from star-shaped pieces of bread brushed with a flavorful herb-infused olive oil. Perfect for holiday gatherings, they serve as an excellent accompaniment to cheese boards or as a base for canapés.

 

Ingredients

– 1/3 cup (80ml) extra virgin olive oil

– 1 teaspoon rosemary (fresh or dried)

– 1 teaspoon oregano (fresh or dried)

– 1/2 teaspoon salt

– 1 loaf sandwich bread (stale bread works best)

Instructions

1. **Prepare the Herb Oil:**

– In a small bowl, combine the olive oil, rosemary, oregano, and salt. Set aside.

 

2. **Cut the Bread:**

– Preheat your oven to 350°F (175°C).

– Place the bread slices on a cutting board. Using a star-shaped cookie cutter, cut two stars out of each slice.

 

3. **Assemble the Chips:**

– Line a baking sheet with parchment paper.

– Arrange the star-shaped bread pieces on the baking sheet.

– Brush both sides of each star with the herb-infused olive oil.

 

4. **Bake:**

– Place the baking sheet in the preheated oven and bake for 10-12 minutes, rotating the sheet halfway through, until the stars are golden brown and crispy.

 

5. **Cool and Serve:**

– Let the chips cool completely before serving.

 

Notes

– **Bread Selection:** Stale bread is preferable as it crisps up better during baking. If using fresh bread, lightly toast it before cutting to prevent squishing.

– **Customization:** Feel free to experiment with different shapes using various cookie cutters. Additionally, you can substitute the herbs with your preferred seasonings.

– **Storage:** Store leftover chips in an airtight container for up to 3-4 days. They can also be frozen for up to 3 months; re-crisp in the oven at 350°F (175°C) for 3-5 minutes after thawing.
