For the Loaf:
1 1/2 cups (190g) all-purpose flour
1 tsp (5g) baking powder
1/2 tsp (3g) salt
1/2 cup (115g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1/2 cup (120ml) milk
1 tsp (5ml) vanilla extract
1 cup (150g) fresh strawberries, chopped
For the Cream Cheese Filling:
4 oz (115g) cream cheese, softened
1/4 cup (50g) granulated sugar
1 large egg
Instructions
- Preheat the oven to 350°F (180°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs, milk, and vanilla. Mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the strawberries.
- In a separate bowl, beat cream cheese, sugar, and egg until smooth.
- Pour half of the loaf batter into the prepared pan. Spoon the cream cheese mixture on top, then add the remaining batter. Swirl gently with a knife.
- Bake for 50–60 minutes, or until a toothpick inserted comes out clean. Cool before slicing.
Notes
Use frozen strawberries if fresh ones aren’t available.
Store in an airtight container for up to 3 days.
