A delightful twist on traditional sweet potato pie, these bars feature a buttery, oat-based crust topped with a rich, spiced sweet potato filling. Perfect for dessert or a sweet snack with a comforting fall flavor.

 

Ingredients

For the Crust:

– 1 cup all-purpose flour

– 1/2 cup rolled oats

– 1/2 cup unsalted butter, melted

– 1/4 cup light brown sugar, packed

– 1/4 teaspoon salt

For the Filling:

– 2 cups mashed sweet potatoes (about 2 medium sweet potatoes, baked and peeled)

– 1/2 cup granulated sugar

– 1/4 cup light brown sugar, packed

– 2 large eggs

– 1/4 cup evaporated milk (or heavy cream)

– 1 teaspoon vanilla extract

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt

Instructions

1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.

2. For the crust: In a bowl, mix together the flour, rolled oats, melted butter, brown sugar, and salt until just combined. Press the mixture firmly into the bottom of the prepared dish.

3. For the filling: In a separate bowl, whisk together the mashed sweet potatoes, granulated sugar, brown sugar, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.

4. Pour the filling evenly over the crust.

5. Bake for 30–35 minutes, or until the filling is set and the edges are slightly golden.

6. Allow the bars to cool completely in the pan before cutting into squares.

7. Optional: Dust with powdered sugar before serving.

 

Notes

– For a deeper flavor, use roasted sweet potatoes.

– The bars can be stored in an airtight container in the refrigerator for up to 3 days.

– Adjust the spices to suit your taste; add a pinch more cinnamon or nutmeg if desired.

– For a gluten-free version, substitute with a gluten-free flour blend and ensure the oats are certified gluten-free.
