This Taco Grilled Cheese Sandwich is a bold fusion of classic comfort and zesty Mexican flavors. Combining seasoned taco meat, melty cheeses, fresh salsa, and creamy avocado between buttery, grilled bread, it’s a satisfying meal that redefines the traditional grilled cheese.

 

Ingredients

– 2 slices of sourdough or whole wheat bread

– 1/2 lb ground beef (or turkey for a lighter option)

– 1 packet taco seasoning (or 1 tbsp homemade taco seasoning)

– 1/4 cup water

– 1/2 cup shredded cheddar cheese

– 1/2 cup shredded Monterey Jack cheese

– 2 tbsp salsa (plus extra for serving)

– 1/4 cup diced tomatoes

– 1/4 cup diced red onion

– 1/4 avocado, sliced

– Butter for spreading and grilling

– Optional: sliced jalapeños, chopped cilantro

Instructions

1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

2. Stir in the taco seasoning and water. Simmer until the mixture thickens, about 3-4 minutes.

3. Butter one side of each bread slice evenly.

4. On the unbuttered side of one slice, layer a mix of cheddar and Monterey Jack cheeses.

5. Spoon the seasoned taco meat over the cheese, then add salsa, diced tomatoes, red onion, and avocado slices. Optionally, add jalapeños and cilantro.

6. Top with the remaining cheese and cover with the second slice, ensuring the buttered side is facing out.

7. Grill the sandwich in a skillet over medium heat. Cook 3-4 minutes per side, or until the bread is golden and crispy and the cheese has fully melted.

8. Remove from the skillet, slice in half, and serve hot with extra salsa on the side.
