  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon peppermint extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line cookie sheets with parchment paper.
  • In a large bowl, cream the softened butter with the granulated and brown sugars until light and fluffy.
  • Add the eggs, vanilla extract, and peppermint extract, beating until well combined.
  • In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet ingredients until just incorporated.
  • Fold in the chocolate chips and, if using, the green sprinkles.
  • Drop tablespoon-sized portions of dough onto the prepared cookie sheets.
  • Bake for 10-12 minutes, or until the cookies are set around the edges.
  • Remove from the oven and let the cookies cool on the sheet for a few minutes before transferring them to a wire rack.

 

  • For an extra festive touch, drizzle with green icing once cooled.

  • For a more pronounced mint flavor, increase the peppermint extract slightly.
