Delicate and crispy almond cookies with a melt-in-your-mouth texture and a nutty aroma. Perfect for a light treat or paired with your favorite tea or coffee.

Ingredients

– 1 cup almond flour

– 1 cup all-purpose flour

– 1/2 cup granulated sugar

– 1/2 cup unsalted butter, softened

– 1 large egg

– 1/2 tsp almond extract

– 1/4 tsp salt

– 1/4 tsp baking powder

– Sliced almonds for topping

Instructions

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Beat in the egg and almond extract until well incorporated.

4. In another bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

6. Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.

7. Flatten each ball slightly with the palm of your hand or a fork.

8. Top each cookie with a few sliced almonds.

9. Bake for 10-12 minutes or until the edges are lightly golden.

10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

 

Notes

– For extra crispiness, bake a minute or two longer, but monitor closely to prevent burning.

– If you prefer a milder flavor, substitute almond extract with vanilla extract.

– Store in an airtight container to maintain maximum crispness.
