A flavorful pizza combining lean turkey sausage with the slightly bitter taste of broccoli rabe, topped with melted mozzarella and Parmesan cheeses on a crispy crust.

 

Ingredients

– 1 lb pizza dough

– 2 tablespoons olive oil, divided

– 2 cloves garlic, minced

– 8 oz turkey sausage, casings removed

– 1 bunch broccoli rabe, trimmed and chopped

– 1/4 teaspoon crushed red pepper flakes

– 1 cup shredded mozzarella cheese

– 1/4 cup grated Parmesan cheese

– Cornmeal for dusting

Instructions

1. Preheat your oven to 500°F (260°C). Place a pizza stone or an inverted baking sheet in the oven to heat.

2. In a skillet over medium heat, add 1 tablespoon of olive oil. Add the turkey sausage, breaking it up with a spoon, and cook until browned and cooked through. Remove from the skillet and set aside.

3. In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant.

4. Add the chopped broccoli rabe and crushed red pepper flakes to the skillet. Cook for 2-3 minutes until the broccoli rabe is wilted and tender. Remove from heat.

5. On a floured surface, roll out the pizza dough into a 12-inch circle. Transfer the dough to a piece of parchment paper dusted with cornmeal.

6. Evenly distribute the cooked turkey sausage over the dough, leaving a 1-inch border around the edges.

7. Spread the sautéed broccoli rabe over the sausage.

8. Sprinkle the shredded mozzarella and grated Parmesan cheeses evenly over the top.

9. Carefully transfer the parchment paper with the assembled pizza onto the preheated pizza stone or baking sheet in the oven.

10. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.

11. Remove from the oven, let cool for a few minutes, slice, and serve.

 

Notes

– For a spicier kick, consider using hot turkey sausage or adding more crushed red pepper flakes.

– If broccoli rabe is too bitter for your taste, blanch it in boiling water for 1-2 minutes before sautéing to mellow the bitterness.

– Ensure your oven is fully preheated to achieve a crispy crust.
