1/2 tsp vanilla extract
Pink or red food coloring (optional)
For Garnish:

Instructions
- Make the Berry Chia Jam:
- In a saucepan over medium heat, cook the mixed berries for 5-7 minutes until they break down and become juicy.
- Stir in honey (or maple syrup) and chia seeds, then let simmer for 2 minutes until slightly thickened.
- Remove from heat and stir in vanilla extract. Let cool completely—the jam will thicken as it cools.
- Prepare the Dough:
- In a large bowl, whisk together flour, sugar, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until the dough comes together. Do not overmix.
- Divide dough into two discs, wrap in plastic wrap, and refrigerate for 30 minutes.
- Assemble the Pop-Tarts:
- Roll out one dough disc on a floured surface to about ⅛-inch thick.
- Using a heart-shaped cookie cutter, cut out an even number of heart shapes.
- Place half of the hearts on a parchment-lined baking sheet.
- Spoon 1 teaspoon of berry chia jam into the center of each heart.
- Brush the edges with egg wash, then place another dough heart on top.
- Seal the edges by pressing with a fork, then poke a few small holes on top for ventilation.
- Brush the tops with egg wash.
- Bake:
- Preheat oven to 375°F (190°C).
- Bake for 15-18 minutes, or until golden brown.
- Let cool completely before icing.
- Make the Berry Icing:
- In a small bowl, whisk together powdered sugar, berry puree, milk, and vanilla extract.
- Add a drop of pink or red food coloring if desired.
- Decorate & Serve:
- Spread berry icing over the cooled pop-tarts.
- Sprinkle with Valentine’s sprinkles and freeze-dried berry crumbles.
- Let the icing set for 10-15 minutes before serving.
Notes

You can use store-bought jam if you’re short on time, but the homemade chia jam adds a special touch!
