Description

Celebrate Valentine’s Day with these adorable and delicious homemade Berry Love Pop-Tarts! Flaky pastry dough filled with sweet berry chia jam, topped with a vibrant berry icing, and decorated with festive sprinkles. Perfect for sharing with your loved ones! 


Ingredients

For the Pastry Dough:

2 1/2 cups all-purpose flour

1 cup unsalted butter, cold & cubed

1 tsp salt

1 tbsp granulated sugar

68 tbsp ice water

For the Berry Chia Jam:

1 cup mixed berries (strawberries, raspberries, or blueberries)

2 tbsp honey or maple syrup

1 tbsp chia seeds

1/2 tsp vanilla extract

For Assembly:

1 egg (for egg wash)

1 tbsp water

For the Berry Icing:

1 cup powdered sugar

2 tbsp berry puree (from mixed berries)

1 tbsp milk

1/2 tsp vanilla extract

Pink or red food coloring (optional)

For Garnish:

Valentine’s sprinkles

Freeze-dried berry crumbles


Instructions

  • Make the Berry Chia Jam:
  • In a saucepan over medium heat, cook the mixed berries for 5-7 minutes until they break down and become juicy.
  • Stir in honey (or maple syrup) and chia seeds, then let simmer for 2 minutes until slightly thickened.
  • Remove from heat and stir in vanilla extract. Let cool completely—the jam will thicken as it cools.
  • Prepare the Dough:
  • In a large bowl, whisk together flour, sugar, and salt.
  • Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Add ice water, one tablespoon at a time, until the dough comes together. Do not overmix.
  • Divide dough into two discs, wrap in plastic wrap, and refrigerate for 30 minutes.
  • Assemble the Pop-Tarts:
  • Roll out one dough disc on a floured surface to about ⅛-inch thick.
  • Using a heart-shaped cookie cutter, cut out an even number of heart shapes.
  • Place half of the hearts on a parchment-lined baking sheet.
  • Spoon 1 teaspoon of berry chia jam into the center of each heart.
  • Brush the edges with egg wash, then place another dough heart on top.
  • Seal the edges by pressing with a fork, then poke a few small holes on top for ventilation.
  • Brush the tops with egg wash.
  • Bake:
  • Preheat oven to 375°F (190°C).
  • Bake for 15-18 minutes, or until golden brown.
  • Let cool completely before icing.
  • Make the Berry Icing:
  • In a small bowl, whisk together powdered sugar, berry puree, milk, and vanilla extract.
  • Add a drop of pink or red food coloring if desired.
  • Decorate & Serve:
  • Spread berry icing over the cooled pop-tarts.
  • Sprinkle with Valentine’s sprinkles and freeze-dried berry crumbles.
  • Let the icing set for 10-15 minutes before serving.

Notes

For a gluten-free version, use gluten-free all-purpose flour.

Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.

You can use store-bought jam if you’re short on time, but the homemade chia jam adds a special touch!
