Vanilla Bean Dandelion Fudge offers a unique twist on traditional fudge by incorporating the earthy sweetness of dandelion flowers with rich vanilla bean and creamy white chocolate. This delightful treat is perfect for those seeking a new and flavorful dessert experience.

Ingredients

– 2 cups (12 oz) white chocolate chips

– 1/2 cup (4 oz) heavy cream

– 1/4 cup (2 oz) dandelion syrup or dandelion honey (or maple syrup as a substitute)

– 1 tablespoon vanilla bean paste (or 1 vanilla bean, seeds scraped)

– 1/2 cup (1 stick, 4 oz) unsalted butter

– 1/2 cup (2 oz) powdered sugar

– Pinch of sea salt

– 1/4 cup fresh or dried dandelion petals (optional, for garnish)

Instructions

1. **Prepare the Dandelion Syrup:**

– If using fresh dandelion petals, gather and wash them thoroughly. Alternatively, use store-bought dandelion syrup or dandelion honey.

2. **Melt the White Chocolate and Butter:**

– In a medium saucepan over low heat, melt the white chocolate chips and unsalted butter, stirring continuously to prevent burning. Once melted, remove from heat.

3. **Combine Ingredients:**

– Stir in the heavy cream, dandelion syrup, and vanilla bean paste (or vanilla seeds). Mix until smooth.

4. **Incorporate Powdered Sugar:**

– Gradually add the powdered sugar, mixing well after each addition until the mixture is smooth and glossy. Add a pinch of sea salt and stir to combine.

5. **Set the Fudge:**

– Line an 8×8-inch baking dish with parchment paper. Pour the fudge mixture into the dish, smoothing the top with a spatula. Refrigerate for at least 3-4 hours, or until firm.

6. **Garnish and Serve:**

– Once set, sprinkle dandelion petals on top for garnish, if desired. Cut the fudge into small squares and serve. Store in an airtight container in the refrigerator for up to one week.

Notes

– Ensure dandelion petals are harvested from pesticide-free areas and only the yellow petals are used, discarding the green parts to avoid bitterness.

– If dandelion syrup is unavailable, maple syrup can be used as a substitute, though it will alter the flavor profile.

– For a vegan version, use plant-based white chocolate and substitute the butter with coconut oil or vegan butter.

– This fudge pairs wonderfully with coffee or tea and makes a thoughtful homemade gift.
