1. Cook the pasta according to the package instructions in salted boiling water. Drain and set aside, reserving 1/4 cup of pasta cooking water.

3. Add the cooked pasta to the bowl with the yogurt mixture. Toss gently to coat the pasta with the sauce. If the sauce is too thick, add a little of the reserved pasta cooking water to reach the desired consistency.
4. Sprinkle the dried mint over the pasta and stir to combine.
5. If desired, toast pine nuts in a dry pan until golden and sprinkle over the pasta before serving.
6. Garnish with fresh mint leaves for added flavor and serve immediately.
